There is just something about cooling and filling smoothie bowls for breakfast, especially when summer is fast approaching. We are getting central AC installed in our house in two weeks’ time and in the meantime, I welcome these cool breakfasts. I also like to make these types of breakfasts over the weekend since I can’t have it during the week due to my work schedule. This would probably be my most-made smoothie bowl recipe. It contains everything I love; bananas, blueberries, raspberries, peanut butter powder (US / Canada), cashew milk and various toppings. If you’re in the mood for a smoothie instead; double or triple the amount of cashew milk and you’re set!
Speaking of “various toppings” I decided to time travel to my childhood and buy blackstrap molasses last week (hence it being used as a topping). I don’t know what came over me but when I was at the bulk store, I saw that you could get it out of a dispenser and thought I would give it a try again (first time in about 15 years). I like how it packs in many benefits and a little really goes a long way. I must say molasses in general is an acquired taste, don’t dump the entire container on your first tasting! I did a bit of research and apparently blackstrap molasses has the following benefits:
-promotes healthy skin;
-stabilizes blood sugar levels;
-promotes bone healthy (due to it’s high calcium level); and
-is really high in potassium which is known for lowering cholesterol and high blood pressure. Who knew!

- 3-4 frozen bananas
- ⅓ cup frozen blueberries
- ⅓ cup frozen raspberries
- 2 tbs peanut butter powder
- ¼ cup cashew milk, unsweetened or sweetened
- fresh blueberries
- blackstrap molasses (optional)
- Place the frozen fruits, plant milk, peanut butter powder in a blender and and blend until smooth.
- Place in a bowl and add toppings of choice.
